Gavi del comune di GAvi DOCG


Grape variety: Cortese 100%.

Vineyard: grapes are grown on the vineyards of San Martino farmhouse in the community of Gavi at 300 meter altitude. They are under vine and their yield is 70 quintals of grapes per hectare. Soil profile: clayey marls.


Tasting notes: it has a straw colour. A fine bouquet of good intensity and persistency with slightly floral flavours. To the palate it is fresh soft, harmonious and well-structured.

Vinification: grape destemming and pressing take place on the evening following harvest. Then, the must is poured into stainless steel vats, where it undergoes maceration along with skins at a temperature of 12°C. After skin separation, alcoholic fermentation begins and goes on for about 15 days at a temperature of 15-16°C; this temperature is needed to preserve the wine’s delicate flavour. Later on, a short refinement will take place in stainless steel vats.

Wine release: wine is released to the market in the month of April following harvest.

Alcohol content: Alcohol 12.5% Vol.
